Cabernet Sauvignon is perhaps the world's most recognized wine . It is a full-bodied red wine with high acidity and tannins. Cabernet Sauvignon is believed to have originated southwest France in the 17th century by crossing cabernet franc and sauvignon Blanc. Both parent plants have noticeable contributions to what we know as a classic cabernet sauvignon. This varietal has since traveled the world with growing regions found in the pacific northwest to Australia, Italy, and Chile. Known by both the most distinguished drinker and complete novices for its notes of black current, black cherry, and black berry. By oaking this varietal, we can add notes of vanilla, spice, and cigar.
Our 2019 Cabernet is no exception to the idea of a classic cab. A very special wine, created with 100% our Oakville Clone block of Cabernet Sauvignon vines. Obvious notes of black and red currants, black cherries, allspice, cloves, nutmeg, anise, and dark cocoa. Exceedingly lush and rich, this textured velvety Cabernet offers a protracted finish of finely integrated barrel and grape tannins. This wine continues to gain ground and become more interesting with each passing month. It drinks well now but will be amazing 2025-2030.
